My name is Kendra McGowan, I am a student at Humboldt state studying History. I am from Marin county California but I currently live in Arcata, and have lived here for the past four years. I interviewed Mellisa Zarp the co-owner of the beach comber cafe in Trinidad. As well as Lauren Gaul, a student at HSU and barista at Mosgos coffee house in Arcata.
I interviewed Mellisa Zarp the co-owner of the beach comber cafe in Trinidad. We talked on the phone and she chatted to me about how she was able to keep her restaurant during these hard times, as well as keep her tradition of zero-waste disparate the COVID restrictions, this in many was was her only form of normalcy for her and her cafe.
I have always been interested in the Humboldt restaurant community and have been curious about what adjustments they might have made since COVID.
I have also been interested in how they have adjusted to the restrictions put on their restaurants in regards to maintaining a zero waste commitment.
